~Sugar-free and gluten-free ANZAC biscuits~
2/3 cup wholegrain rolled oats (quinoa flakes for GF)
2/3 cup preservative-free desiccated coconut
1/2 cup spelt flour (almond meal for GF)
1 Tbsp Natvia Stevia Sweetener
1 tsp ground cinnamon
1 tsp baking powder
3 Tbsp coconut oil or melted butter
3 Tbsp filtered water
1 Tbsp manuka honey
1 Tbsp peanut butter (optional)
1 tsp vanilla extract
Pinch of rock salt
Mix all dry ingredients and wet ingredients separately, then mix together. Roll a spoonful of the mixture into a ball then flatten into shape on a lined baking tray. Bake for 20 minutes at 180 deg fan forced. Biscuits should be golden but still soft. Allow to cool and harden on the bench before storing.
Great idea using the quinoa flakes, these look delicious 🙂
