This delicious alternative to a wheat based bread is quick and easy to put together. I used:
- 2 cups buckwheat flour
- 1 tsp vanilla extract
- 1 tsp turmeric
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3 medium smashed ripe bananas
- 2 free range eggs
- 3 Tbsp melted extra virgin coconut oil or grass fed butter
- good pinch of rock salt
- buckwheat grotes (for garnish)
- optional: 90% dark chocolate chips or chopped walnuts
Mix the wet and dry ingredients separately, then blend together, adding filtered water if texture requires. Sprinkle the buckwheat grotes over the top before baking.
Bake at 180deg fan force for approx 30 mins.
